Espresso coffee: some tips for make it in a perfect way

1 – CAREFUL SELECTION OF THE BLEND


Choosing the right raw material carefully is essential to offer a good coffee to your customers. But how do you recognize a coffee blend of quality?

Here are some tips:


  • The beans must have a uniform colour
  • Oval-shaped beans belong to the “Arabica” variety (the most valuable), while the round ones are “Robusta”
  • The presence of worm-holed beans, in a good quality product, is limited


2 – FOCUS ON PREPARING


When preparing an espresso coffee for your customer, take care with the grinding, which may require regulation several times a day.

Coffee, in fact, is a “live product” and it is susceptible to changes of humidity in the air.


Generally, a coarse grinding leads to difficulty in extracting the aroma during the percolation process (under-extraction); on the other hand, too fine a grinding leads to a very strong coffee, with a scent of burning (over-extraction).


Once the grinding is regulated, press the coffee powder into the filter (the proper force that your hand should apply to press coffee correctly corresponds to 20 kg) and remove residue from the edges, before attaching the filter to the machine.


3 – FOCUS ON THE MACHINE


When extracting an espresso coffee, you must pay attention to two issues: the temperature of the water, that should be around 90°, and the pressure, that should reach 9 atmospheres.


To guarantee the consistent quality of your espresso coffee, be sure to sanitise all the parts of the machinery after each use and carry out a careful cleansing of filters, filter holders, seals and purification system every day.


Proper maintenance of the machine will have a positive impact on the quality of your coffee.



4 – FOCUS ON THE SERVICE


Serve your espresso coffee on a saucer with a spoon, taking care that the side of the cup with the logo is always facing your customer.


Serve a glass of water together with the coffee, to allow the customer to “clean” his mouth before tasting your espresso.
